Old Mill likely returning to Valentine

A new business could soon open in the former Old Mill building in Valentine.

VALENTINE, Neb. - A new business could soon open in the former Old Mill building in Valentine.

According to a legal notice published in the Valentine Midland News, a company called At The Table Restaurants, LLC has been organized using the Old Mill's address. The initial agent listed for the LLC is Colton Gilbert.

News Channel Nebraska reached out to Gilbert, who said he's hoping to close on the building next week and open the eatery around Memorial Day. Colton and his wife Abigail plan to keep the business name Old Mill and offer many of the same items.

“We moved to the area a couple of years ago, and we just loved Old Mill. We were sad when it closed,” said Colton. “The previous owners say they will act like consultants with us in the beginning to help offer many of the same items.”

The Gilberts also plan to expand the breakfast menu, but at first may not offer as many whole foods.

“We think there’s something special about coming together at the table,” said Colton, “We want an atmosphere where different people from different backgrounds can meet.”

Old Mill — once a popular restaurant, bakery and coffee shop — closed last year after the owners decided to move and pursue a different venture, as News Channel Nebraska previously reported.

Several new restaurants have recently opened or are preparing to open in Valentine, including Bull Market, Mi Toro Mexican Restaurant, and 201.
